Tacaco (Sechium Tacaco) is a crawling vine that grows in tropical regions. It produces a small green football shaped vegetable that´s edible. You boil them for about 10 minutes, peel off the skin, and cut it half. It's served alone, or many times as part of olla de carne.
The Tacaco contains a small, white pit in the center. The pit is extremely bitter, and should be discarded.
