Itabo (Yucca Gigantea) is a flowering plant with long, pointy leaves. It grows throughout Central American and is also known as Izote and Espadillo. The flowers are cut and eaten, generally with scrambled eggs.
Before eating, the pit of the flower must be removed, since it's got a bitter taste.
