"Carne en salsa" is any type of beef, usually stringed or cubed, that's cooked in tomato based sauces. On occasion vegetables such as carrots and peas are added.

Carne en salsa is served as part of "casados" at lunch, or with gallo pinto at breakfast. In small diners and restaurants it's often preferred to other varieties of meat, since the longer cooking time makes it more tender and flavorful.
